Cookie Exchange

I was supposed to post this yesterday but time got away from me so I am a day late. Oh well.

These have become my daughter’s new favorite cookie. They taste very much like Pepperidge Farm Milano cookies so if you like them you will love this homemade version. We do love these. Enjoy.

Brown Sugar and Chocolate Sandwich Cookies

Dough

1 1/2 cups (3 sticks) unsalted butter
2 egg yolks
1 1/3 cups light brown sugar
1 teaspoon salt
4 cups unbleached all-purpose flour

Filling

2 cups chocolate chips
4 tablespoons unsalted butter
6 tablespoons light corn syrup

To make the dough:

In a large bowl beat together the butter, egg yolk, brown sugar, vanilla, and salt until well combined. Mix in the flour. Cover and chill the dough for at least 1 hour.

Preheat the over to 375° F. Line cookie sheets with parchment.

Use a cookie scoop to scoop the dough. Cut each in half and roll into balls. Place on the prepared sheets and flatten with a glass dipped in sugar. Bake for 8 – 10 minutes. Remove from oven and transfer to a rack to cool.

To make the filling:

Melt and stir the chocolate and the butter in a double boiler until smooth. Stir in the corn syrup. The mixture will be thick.

Assemble the cookies:

Spread a small amount of the filling on one cookie and top with another.

(Recipe can be halved if you want.)

  3. Oh YUM Zoe! These look decadent! This is another new one for me. I have books dedicated to just cookies and I’ve read so many recipes that I’ve never seen or heard of!

      They are good Elysia. I have made one batch already and my daughter and her friends made short work of them. My guess is I will be making them 2 or 3 times this holiday season.
